Quick, Homemade Strawberry Sauce with Waffles

This healthier version of waffles can be made and enjoyed in 10 minutes.

Ingredients (serves 1):

  • 1 cup fresh strawberries, chopped
  • 1 tablespoon agave nectar
  • 2 multi-grain waffles (these are from Trader Joe’s)
  • 1 tablespoon Earth Balance Spread

Toast waffles in toaster or convection oven.

In a small pot, cook the strawberries with agave nectar on high heat for about 7-8 minutes.  If you’re looking for a more jammy consistency, an immersion blender is your best bet.  The strawberry sauce is just mildly sweet, still a bit tart. You can add more agave nectar or sugar to sweeten the sauce.

I like to add a little bit of Earth Balance Spread to the waffles before piling on the strawberry sauce.
