Spring has officially begun this week but I’d like to fast forward to summer. It’s still a bit chilly in San Francisco and I cannot wait for warmer weather. In the meantime, I’ve made healthy fruit popsicles with strawberries, kiwi, non fat plain Greek yogurt, and unsweetened almond milk. No added sugar!
I found these cute popsicle molds from Daiso. You can also use paper cups and wooden popsicle sticks if you don’t have a mold.
Next time, I’ll use coconut milk instead of Greek yogurt for more flavor and richness.
Instructions are simple – rough chop strawberries and cut kiwi into half-moon slices. Mix yogurt with almond milk. Pour in fruit then milk mixture, repeating in layers. Let the mixture set in the mold so that air bubbles can release before adding the sticks. Fill to the top, freeze, and enjoy!
